Sunday baking project

I've always wanted to bake.

Thats the main reason for me wanting to get an oven in the first place.

Problem is, i don't know how.... so i decided to start with something easy, so easy in fact, like with a box of cake mix and ready made frosting, and see if i can handle that first. Babysteps right?
I used Pillsbury Devil's Food Cake Mix, and BC's Cream Cheese Frosting.

Oh, check out my new handy dandy new food processor i inherited bought from my sister. :D
It's so awesome, can't wait to make baby food purees with it.

Silicon muffin trays!
ps: i found out that silicon tray cooks faster than normal tin trays,
so u gotta keep an eye on it or u'll have burnt cake.

They're not pretty, but gosh they are tasty!

FROSTING!!!


I wanted to do a pretty swirl, but the cream cheese frosting was too runny so it didn't stick, instead melted into a blob of goo.

see. :( but fortunately it was still yummy...

Overall i'm counting it as a success.

Muuzi ROCKS!!!

My husband spoils me SO MUCH...

I've been wanting an oven for ages, and since i've started earning my own money again, i've been saving to buy myself an oven.

Finally went down with Muuzi to BEST in OU to get one....Being the impulse shopper that he is, we ended up bring home a additional electric grill as well.

I usually frown upon Muuzi's impulse buys, but this grill was a FANTASTIC addition to our kitchen. Since we both are on a mission for healthier food, grilling things instead of frying them was a delight.

Now we have BBQ Sundays, were every weekend we'll have something yummy thats cooked on the grill for lunch. Here's some pics of our first attempt. :)

AWESOME Grilled Spinach Burgers.

Ingredients: Spinach, Cooked garlic and onions, and minced meat.

Mush ingredients into patties, and grill

Add fresh salad, dijon mayo and toasted buns. YUM!!

Quack Attack!!!

Got up super early today since i knew i had a million and one things to do today...

Unfortunately, 'some people' did not get the memo and wouldn't wake up... hence leaving me to obsess and plot the day's activities to make up for the time we lost..

First off we had to go to the condo admin office and get the letter of approval to use the poolside area... and eventho we booked it like weeks ago, it still took them almost a hour to give us the papers we needed. So bloody irritating, like i wasn't frantically off schedule already.

After eons of waiting, finally got our paperwork done.. and rushed off to Tesco to buy supplies for Muuzi's famous chicken wings (which i have never tasted before but i hear its yummeh!)... then finally had lunch around 4pm, at which point i was already waddling about like a duck (ironic, but then again expected since i am 8 months pregnant u know..)

But i'm so glad my search for rubber duckies is over! I found these darlings at Tesco and they were only about RM7 perbag. SCORE!

My fave is the little Pirate Ducky n Bow tie Ducky! So cute...

Currently all Muuzi's boys are having a boys night in, just chillin, marinating some chicken, and watch Conan, the barbarian... So i'm gonna turn in and have a good nights rest, so much to do tomorrow!! 

Muuzi and Syed mixing up some chicken... (don't worry, hands are super clean.. ngee) Can't wait to taste it tomorrow at the party.. weeee!

Pure EEEEVIL!!!

Since I'm a wife now, so prolly one day i'll be mom, so i might as well learn to flex my cooking muscles, anyway so i was checking out some awesome bakers online, i came across this recipe. TIS is SIMPLY TO DIE FOR!!

Oreo Cookies and Cream No-Bake Cheesecake

Makes 16 mini 2 inch cheesecakes or one 8 inch cheesecake.

Crust
1 1/2 cup crushed graham cracker
1/4 cup packed light brown sugar
7 tablespoon unsalted butter(melted)

1. Combine graham cracker crumbs with sugar.
2. Add melted butter and blend until combined.
3. Press into pan. Set aside.

Cheesecake

2 ¼ cups heavy cream

1 pound cream cheese, softened

2/3 cup sugar

½ teaspoon salt

2 tablespoon lemon juice

2 teaspoon vanilla powder

¾ cups Oreo Cookies, crushed

Instructions:

1. Beat heavy cream until medium peaks form. Set aside.

2. Add cream cheese, sugar, salt, vanilla powder, lemon juice to a bowl and beat with a paddle attachment until smooth (approximately 3-5 mins). If you do not have a stand mixer or a paddle attachment a hand beater will work as well, but will take twice as long to achieve a smooth consistency.

3. Add cream cheese mixture to heavy cream and beat until incorporated.

4. Gently fold in Oreo cookies.

5. Fill chosen pan with a slight mound at the center, as the cheesecake will become slightly sunken at the center.

6. Refrigerate for at least 6 hours to set or overnight for best results.

7. Remove from refrigerator and smooth top to level with edges. Serve with whipping cream and garnish with mini Oreos.
